
Vegetarian Burger
I have not posted a blog for a long time, and i can assure i can give any number of excuses, but i think that it was a bit of laziness, a bit of lack of inspiration and a bit of lack of photograhic material. My helper has been on leave for the past 3 weeks and i have been preparing our dinners late and with the lack of organisation and therefore did not take any pictures. Yesterday i decided that i will plan my dinner preparion better and ensure that i take some pictures & Voila here is our “Healty Vegetarian Burger Dinner” from last night.
Vegetarian Burger
1 Chick Pea, butternut and spinach patty (available at Woolies)
1 Whole wheat or seed roll
5ml olive oil
3-4 thin slices of tomatoes
20ml grated white cheddar cheese
Method
- Heat a small non-stick pan and spray with “Spray & Cook” and the add the patty and allow to cook on very low heat for about 4 minutes on each side and remove from pan
- Cut the bread roll and brush with a little olive oil and lightly toast on a griddle pan and then place the patty on the roll, followed by the very thinly sliced tomatoes and sprinkle with salt
- Top it of with the grated cheddar cheese
- Serve the burger with some oven baked potato wedges and a hallumi cheese salad
Hallumi Cheese Salad
5-6 index finger size pieces of hallumi cheese (marinated overnight in lemon juice & garlic)
35ml crushed cornflakes and 10ml chick pea flour (mixed together)
250ml finely shredded iceberg lettuce
20ml toasted brown sesame seeds
35ml toasted sprinkle nuts
4-5 mini vine tomatoes
4-5 mini rosa tomatoes
4-5 pitted black olives
10-12 slices of English cucumber
Method
- Heat a non stick pan and spray with “spray & cook”
- Roll cheese fingers in the corn flakes mixture and place on the frying and allow to grill for about 25 seconds on each side
- Remove from pan and once again roll the cheese fingers in the cornflakes mixture before allowing them to cool
- Place shredded lettuce in a serving bowl and sprinkle the nuts and sesame seeds over the lettuce
- Place the tomatoes, sliced cucumbers and olives around and on top of the lettuce
- Once the grilled cheese is cool place the cheese fingers in the centre of the bowl
- Pour the dressing over the salad and serve immediately
Dressing
15ml olive oil
5ml lime juice
2.5ml soya sauce
2ml palm sugar (or brown sugar)
10ml sesame seeds (lightly pounded)
3ml salt
Method
- Mix all the ingredients for the dressing together and pour over the salad
