Sprout and Vegetable Salad
This is an excellent dish to serve as a side salad or with some rice noodles as a main dish for lunch.
Sprouts & Vegetable Salad (Serves 4)
375ml mix sprouts
125ml shredded iceberg lettuce
125ml chopped baby spinach
100ml grated carrots
100ml grated cucumber
100ml roasted peanuts
Dressing
5ml salt
5ml freshly ground black pepper
3ml sugar
Juice of 1 medium size lime (20ml)
3ml lime zest
10ml olive oil
10ml peanut butter
5ml finely chopped red/green chilli (optional)
Method
- Mix all of the vegetables, peanuts and the sprouts together
- To make the dressing, mix salt, pepper, sugar, lime juice, lime zest, olive oil, chilli and peanut butter, add a little water if required and allow to stand for about 10 minutes
- Pour dressing over the salad just before serving
