Savoury Flapjacks
I have been working with the Sasko Team, to create a few recipes that conform to the ethos of my blog “Healthy & Vegetarian” and using the amazing “Sasko Products”. It has been fun and challenging however I thoroughly enjoyed the experience thus far and I am sure the next couple of months will be the same, so watch this space —- I will be sharing these new recipes that maybe savoury, maybe sweet, maybe Indian or maybe fusion, but most certainly Vegetarian and Eggless.
Post summer vacation indulgence, it is quite difficult to get kids and adults into a good eating regime, you have to literally turn into a “creative director” when preparing daily meals and snacks. Costumes, disguise and creative make up have to come into play to camouflage all of the “healthy ingredients” and turn them into tasty treats and tasty meals, to be enjoyed by one and all. “Savoury Flapjacks” is one of those treats where a whole host of vegetables can be disguised to create a tasty treat.
Savoury Flapjacks
250ml Sasko Bran Rich Self Raising Flour
5ml salt
2ml baking powder
5ml crushed fennel seeds
5ml grated rind of a lemon
500ml of a mixture of grated and chopped vegetables (spinach, carrots, baby marrow, spring onions)
5ml lemon juice
50ml finely chopped coriander leaves
200ml water (approximately)
Method
- In a large bowl, mix all of the dry ingredients and stir in the lemon rind
- Mix the vegetables, lemon juice and coriander together and add to the dry ingredients
- Ensure the vegetables are well coated with the flour and they are not in lumps
- Use enough water to make thick batter (similar to the one for crumpets and flapjacks)
- Heat a non stick frying pan and drop small amounts of batter to make small flapjacks/crumpets
- Serve with a spicy tomato sauce for adults and for kids a plain tomato sauce
Yields Approximately 12 Flapjacks
