Quick Salad With Omega Rich Seeds

I received a lttle box of treats from Mega Vision Media, and to my surprise the contents were from the Nu Seed range–yes toasted and flavoured seeds that make up one Omega Rich Punch that is so crunchy and tasty. My box of treats comprised a packet of toasted seeds with pomegranates, 2 boxes of little prepacked lunch box snacks and my all time favourite the Peri Peri flavoured roasted seeds.

The lunch box snacks have been added to my sons lunch box on a daily basis for the past couple of days, first days pack came back with the story “you know I dont eat all these seeds–it is for the birds” so all I did was open a packet and Voila that one had bits of choclate and I asked him to taste–and the prompt reply I received was “oh this is nice” and as they say the rest is history. Now let me just clarify that the son I am refering to is all of 31 years old. The snack box comes with a variety of options seeds + nuts, nuts + dried fruit & etc. I am sure adults and kids will love to have one of these snack packs in their lunch bag/box.  They will full fill the snack attack–no need for the vending machine and the bonus of it is that they will be snacking on a whole host of nutrients (2 jobs done in 1 go)

I used some of the Roasted Seeds with pomegrates in my salad this afternoon and loved it—-for the salad I used greens that I had in the fridge and you can adjust the salad ingredients as per your taste and availability. The seeds and nuts and dried fruit will just turn any simple salad dressing into the star of the show. For my salad dressing I used the seeds as a flavourant by blending it and then I also used some for texture and my dressing was so good you could spoon it up and enjoy and for that I used:-

Dressing

50ml orange juice

50ml pomegranate juice

25ml olive oil

50ml of roasted peri peri seed mix

Method-Dressing

  • Place all of the ingredients for the dressing into a blender and mix for 2-3 minutes
  • Adjust seasoning if necessary–the peri peri seeds have salt, so I did not add any more-however to give it a an extra punch I added some green chilli
  • Pour into a jug and add 50ml of the Roasted Seeds with Pomegranates, mix well and pour over your salad mixture

some mixed lettuce leaves

chopped up carrots

cauliflwer florets

sugar snap peas
