Mix Bean Salad
The famous quote “Necessity is the mother of all inventions”, and for me “Necessity” has been the backbone behind most of my creations.
Trying to be “carb-free” on a vegetarian lifestyle has not been easy – well it has been virtually impossible to create dishes that are absolutely “carb free”, as all lentils, chickpeas, beans, legumes and etc. have carbs in them-nonetheless – I do think we need to have some “good carbs”.
One day I went into the kitchen to prepare dinner for myself and I rummaged through the fridge and pantry and picked up some fresh and canned foods and thought all this can work together – providing I pack it up on the flavour department – I also wanted to keep try and keep this one “Indian spice free” (I have no qualms about Indian spices – but my sons on the other hand – won’t say anything further). “Viola” and here is my creation
Mix Bean Salad (Serves 4)
5ml salt
5ml freshly ground black pepper
10ml sesame seeds
10ml sesame oil
5ml lemon juice
250ml canned butter beans (drained & washed)
250ml canned black beans (drained & washed)
250ml sliced extra fine green beans
125ml sliced orange/any colour peppers
100ml chopped tomatoes (of your choice)
Method
- Mix all the other ingredients to form the dressing in a bottle
- In a mixing bowl add all of the salad ingredients and toss well before pouring the dressing over
- Serve as is or on a bed of mixed lettuce leaves
NB. I did warm the salad in the microwave for about 30 seconds before serving myself – and i did not serve it on lettuce leaves.
