Green Beans & Potatoes

This is an addition to my “Chana Masala” dish. Whenever i prepare my lentil/beans dishes, i always ensure i also do a vegetable dish, and this green beans and potato dish is simple, yet very flavourful. Winter has hit Johannesburg and nothing sounds better than a hearty home cooked curry served with hot roti of the griddle pan.


Green Beans & Potatoes


10ml cooking oil

10ml cumin seeds

5ml minced ginger

2 fresh chillies chopped finely

500ml finely chopped green beans

500ml finely chopped potatoes

3ml turmeric powder

100ml water

5ml salt

10ml lemon juice


 

Method

 

  1. Heat oil in a shallow pan and add the cumin seeds, chillies and lower the heat
  2. Add the chopped green beans, potatoes, turmeric powder and water, cook till beans and potatoes are tender
  3. Season with salt and lemon juice
  4. Serve with roti’s or as a healthy snack in a little bowl topped with some sesame seeds or crushed peanuts

    Thanks Tandy, i am trying my level best to be warm, but i am one of those that just cannot handle the cold weather- i think it is the Indian blood in me
