Dried Fruit Nuggets
I have had the last bits of a variety of dried fruits, that had gotton even drier and so I decided to try and cook them and make them into some delicious little nuggets. I took them over when i went to see my little neice who is all of 2years old and told her it was her sweets & she quickly replied “only one sweeeeet”, as she is not allowed to have sweets. She really enjoyed them and so did the rest of the family
Dried Fruit Nuggets
250ml chopped seed less dates
100ml chopped dried apricots
100ml chopped dried figs
75ml desiccated coconut
125ml finely chopped almonds, pistachios and cashews
5ml cinnamon powder
3ml cardamom powder
3ml nutmeg powder
75ml ghee or butter
Method
- Heat ghee/butter in a heavy based pot add figs and apricots and sauté for approximately 5minutes or until the fruit is tender
- Now add the dates, spices and chopped nuts and allow to cook till the mixture comes together resembling a dough like substance
- Remove from heat and allow to cool, before kneading the mixture and making little ping pong ball sizes and roll in powdered edible glitter and store in an air tight container
