Cocktail Pies

My neices 2nd birthday party was on Saturday and all of the spring rolls, samoosas & cocktail pies went down very well-lucky i over catered–just an old family habit. My sons have left for the “Tour de France” so i am not sure that i am going to be doing much cooking., howver i think i will use this time to re-stock my freezer and be ready for orders that will hopefully pour in. These cocktail pies are always a huge hit and really quite simple to make, i use ready made puff pastry (1 roll of puff pastry gives 24 good sized cocktail pies), and there are a number of fillings that i use, however today i am sharing the recipes for a very easy and tasty potato filling.

 

Potato For Pies


3 medium potatoes

50ml cooking oil

150ml grated onion

2-3 curry leaves

5ml crushed cumin seeds

1 green chilli –finely chopped

5ml freshly grated root ginger

15ml sesame seeds

5ml turmeric powder

5ml salt

10ml freshly squeezed lemon juice

75ml finely chopped spring onions

75ml finely chopped coriander leaves

 

Method


  1. Peel and chop potatoes into small cubes
  2. Heat oil in a heavy based frying pan, add thee grated onions and stir fry for a few minutes
  3. Add curry leaves, cumin seeds, green chilli, ginger and allow the mixture to roast for a minute before adding the sesame seeds
  4. Add the potatoes and turmeric and lower heat, cover pan  and allow to cook till the potatoes are soft and tender
  5. Remove lid, season with salt and lemon juice and allow to cook uncovered for a few minutes
  6. Once the mixture has cooled thoroughly, mix in the coriander and spring onions
  7. This mixture can be used as a filling for samoosas, pies or for a toasted sandwich

    Thanks Max, it really is divine as filling for toasted sandwich and you can serve these with a little sweet chilli sauce

    These look very food, Usha. Its must be quite exciting with your sons taking part in the Tour de France. I was in Paris 2 years ago when the race was on – there is a very nice vibe. Enjoy your day, Usha.

    Hi Pink, thanks, & i use this potato filling for so many different things–toasted sandwiches, pies, samoosas, toasted between two tortillas and served with a tangy tomato salsa.

    Thanx Mitzi, my sons are not taking part in the main event, however they cycle the same route, but they go out in the mornings and then wait at the finish to see the “pros” come in. They were also there in 2009, they did not go last year because of the soccer world cup. They are very keen cyclists. have a great week ahead
