Chocolate Vanilla Tea Ring

Just when I thought I am not going to experiment with cakes anymore – because I thought I found the best Vegan/Eggless chocolate and vanilla cake recipes

Yes – I did decide to try something different – and I am so glad I did – because this marble chocolate and vanilla a cake is amazing – I am the only one who has tried it, (my family have tried the vanilla version only and loved it) and I am loving it, I made the first version – eggless and then tried the vegan version and both as good as good can be for eggless and vegan cakes – there is not point at all asking my sons to try – they will just say why does it have to be eggless or vegan

This cake is so very perfect to be baked in a ring pan and the chocolate and vanilla flavours are so distinct – I think the next time I will try it with a layer of blue berries in between the chocolate and vanilla layers – sounds like a good plan – if I am happy with the result – will share it right here

Chocolate & Vanilla Tea Ring 

125ml plain yogurt

125ml cooking oil

5ml vanilla extract

2.5ml vanilla powder (optional)

250ml sifted icing sugar (can be reduced)

375ml cake flour

5ml baking powder

2.5ml salt

2.5ml bicarbonate soda

65ml water (if required)

35ml cocoa powder

35ml warm water

Method

  • Place measured yoghurt & oil in a medium size bowl and whisk – ensuring the mixture is light and fluffy
  • Add vanilla extract & powder – whisk well before adding the icing sugar – once again whisk well
  • Sift in the cake flour, baking powder, salt and bicarbonate soda – and switch from a whisk to a spatula
  • Mix using the folding method – mix & ensure all ingredients are well incorporated – add the water if necessary to ensure you have a soft batter
  • Divide the batter into two bowls and add cocoa & water mixture to one portion & keep the other portion plain
  • Grease a tea ring pan – pour in the chocolate mixture and using a spatula smooth over – and then pour in the vanilla layer – once again smooth the top
  • Bake at 180 degrees for 35-40minutes – or till a toothpick poked in comes out clean
  • Allow to cool before removing from tin – and cool completely before dusting with icing sugar or use a chocolate ganache or a favoured icing of your choice before serving

To make this cake vegan, replace yogurt with a vegan option
