Chana with Chili Bites

This is a recipe that was created as i merrily went along cooking on Monday- i looked in the fridge and picked up a group of left overs and then decided i was going to put them together and create a dish, well to my surprise it turned out wonderful and i straight away decided to make a note of the process and the recipe. I am on a mission of experiments, i am trying to use fresh herbs and fruit juice as seasonings for my meals, i shall be sharing all my successful recipes with you. I will soon post my recipe for the ever popular chilli bites.

Chick Peas with Spinach & Chilli Bites

10ml cooking oil

100ml chopped onion

10ml ginger & garlic paste

2 green/red chillies finely chopped

200ml peeled & chopped potatoes

100ml water

250ml chopped spinach

100ml chopped tomatoes

10ml chana chat masala (available at most Indian grocery stores

500ml cooked brown chick-peas (you can also use the tinned white chick peas)

7ml salt

15ml lemon juice

250ml of prepared chilli bites

40ml chopped coriander

Method

  1. Heat oil in a medium size pot and add the onion and allow to brown
  2. Add the ginger/garlic paste, and the chillies and reduce heat, and add the potatoes, about 100ml water, and spinach, stir well and allow to cook for about 10minutes or till the potatoes are a bit tender
  3. Add the tomatoes and chick-peas (the small brown chick peas that are available at Indian grocery stores, has very nutty taste and combining it with the chilli bites brings out all the flavours)
  4. Allow to cook for about for about 25min, stirring occasionally, season with salt and lemon juice
  5. Garnish with the chilli bites chopped coriander, serve with basmati rice or puri (Indian fried bread) or just on its own in a little bowl with an added squeeze of lemon.
