Healthy Vegetarian Foods

Alloo Fry

Translated into English this is stir fried sliced potatoes. Since my son is still not eating any beans or lentils, planing a weekday meal for him is becoming rather changing. There are just a few items on his “To Eat” list, & thankfully potatoes are one of them. It is absolutely amazing at how many dishes one can make with potatoes or incorporating potatoes. Subtle changes and inclusion or omission of spices totally change the flavour and tast of potatoes. This dish is so simple and yet so flavourful that it did not make to a serving bowl, it went straight from pan to plate and the rest as they is history.

 

Potato Fry


50ml cooking oil

5ml mustard seeds

3 medium potatoes

5ml mustard powder

5ml turmeric powder

7ml salt

Method

 

  1. Peel and thinly slice potatoes into rounds and wash thoroughly and drain
  2. Add the turmeric and mustard powder and mix thoroughly,       and allow these potatoes to marinate for about 35 minutes
  3. Heat oil in a heavy based non stick frying pan, add mustard seeds and allow to splutter, before adding the potatoes, lower heat, cover and allow to cook till the potatoes are soft and tender
  4. Remove lid season with salt and allow to cook for a further 5-6 minutes or till the potatoes crisp a little
  5. Serve with rotis or fresh bread

    Hi Tandy, unfortunately it does & my sons love it, I however do not eat to much of potatoes. I am trying to ensure that my son has a balanced diet, and because he is not having lentils and beans he is taking protein shakes, and eating potatoes and lots of veggies.
